Given the unique properties of ceramic blades, here are a few key points to keep in mind when testing:
Initial sharpness is usually very high: Ceramic is extremely hard (Vickers hardness typically required to be ≥ 850 HV), so new blades are often razor‑sharp.
Edge retention is a strong suit: One of the main advantages of ceramic knives is slow dulling – they hold an edge much longer than stainless steel knives. Professional tests confirm this.
Toughness is the Achilles’ heel: Ceramic is hard but brittle. Professional drop tests (e.g., from 1 metre height) are a major challenge – the blade may shatter or the edge may chip. Cutting very hard foods (like corn or bones) can also cause chipping or breakage.
